Easy Sheet Pan Chicken Fajita Lettuce Wraps
(Quick, colorful, and packed with lean protein and veggies!)
Ingredients (Makes 2 servings):
1 lb. boneless skinless chicken breast, thinly sliced
2 bell peppers, thinly sliced
2 tsp olive oil
2 tsp fajita seasoning
(Tip: Substitute 1 tsp chili powder + ½ tsp cumin if needed.)
2 tsp lime juice
6 romaine lettuce leaves
¼ cup plain non-fat Greek yogurt (optional)
Directions:
1. Preheat oven to 400°F.
2. Combine chicken, bell peppers, olive oil, seasoning, and lime juice in a resealable bag or bowl. Mix well.
3. Spread evenly onto a foil-lined baking sheet.
Bake for 25–30 minutes until chicken is fully cooked.
4. Serve in lettuce leaves. Top with Greek yogurt if desired!
